So here's how to cook Ate Josie's (Lutong-bahay) Lola's Sopas:
Ingredients
2 Tbsp. Star Margarine
1/4 Chicken (Better kung maliliit na pieces)
2 pcs. Garlic
1 Carrot chopped into small pieces
1/2 Cabbage chopped
3 Tbsp. Patis
1 can of evaporated milk
1 Kilo ribbon-cut pasta or elbow macaroni
1-2Cups water (Pwede rin chicken broth)
Let's get cookin'!
Una, kumuha ng kaldero, wag yung saingan pero yung pinaglulutuan nyo ng sauce para sa spaghetti. Heat the pan and put in the star margarin, let it melt.
Once melted, put in the garlic and saute (wag sunugin).Pag naamoy mo na ang garlic sa air put in the Chicken and saute it with the garlic. After a minute put in some patis (wag ka matakot maglagay kasi lalagyan naman yan ng tubig, pero wag ibuhos ang isang bote ha OA na yun)
Gisa gisa lang at pag nakita mo nang hindi na pinkish ang chicken, go ahead and put in the uncooked pasta (again, uncooked). At this point you may wanna put in some more star margarine on it kasi baka naabsorb na ng chicken lahat, just put in like a tablespoon.
So you'll hear the pasta making some noise kasi matigas sya habang ginigisa, sabi ni Ate Josie mas naabsorb neto yung flavor habang ginigisa ng hilaw (totoo naman).
After like 5mins of pag-gigisa.. put in some water, just eyeball it (wag masyadong marami, at wag masyadong konti) remember the pasta will absorb the water so make sure that you have enough. Simmer until the pasta is cooked.
When the pasta is cooked, put in the evaporated milk. Wag kang buhos-happy at wag ilagay lahat, half muna then taste, make sure na ang soup ay swak sa panlasa nyo. So go lagay lagay ang milk, make sure to taste it. If kulang na ang alat, put in some salt or patis. Simmer it for 3mins then put in the veggies. Now it's just a matter of let say 5-8 mins and your soup is done!
May ibang tao (tulad ko) na gusto ng malabsak na pasta kaya I simmer my soup for another 5minutes hanggang sa halos mawalan na sya ng sabaw.
Again, the key thing here is to taste your Sopas. Medjo matamis na maalat dapat.
